Le Trou du Cru est un fromage au lait de vache à pâte molle à croûte lavée, originaire de Côte d’Or. Il est lavé pendant 3 semaine d’affinage au marc de Bourgogne (alcool fort).
Cette particularité d’affinage se retrouve dans ses arômes d’alcool aux senteurs de paille. On l’appellait aussi la "petite Epoisses". Mais ce terme n’est plus autorisé depuis l’obtention de l’AOC
Le Trou du Cru a une croûte orange-rouge et une pâte jaune clair. Il dégage de puissantes odeurs.
