MARKET INFO >> CHEESE AND HEALTH >> Cheese and calcium

Cheese is a great source of calcium, useful for creation and preservation of bones and teeth. A portion of Cantal, for example, gives 1/3 of the calcium needed each day for an adult.

Does cheese help to protect against dental caries?

Yes it does. Dental caries appear when bacteria, fed by sugar, make an acidic secretion which dig the tooth. Some proteins, which are contained in cheese (as casein) help to protect against that secretions and improve teeth’s defences.

Which are the cheeses containing a lot of calcium?

Those made with a lot of milk, which are drier and denser. The cheeses with a pressed pate are the best, followed by the pates with markings, the soft pates and the fresh pates.
