The Guerbigny or the Coeur de Marie

It is a raw cow’s milk cheese, with a soft pate and a washed rind, which has the shape of a heart. It is 11 cm across, weighs about 250 gr and contains 23% of fat for its total weight. The Guerbigny is from the Munster’s family but looks like a Rollot.

That cheese comes from the village of Guerbigny, which is located in the Somme. It is sometimes called « Cœur de Marie » for an unknown reason. Only one family continues the production, but can’t sell it, so they actually try to obtain an approval from the sanitary authorities.

Excellent with a Sancerre, that cheese will make the children laugh because of its sticky rind.
