The Guerbigny or the Coeur de Marie

It is a raw cow’s milk cheese, with a soft pate and a washed rind, which has the shape of a heart. It is 11 cm across, weighs about 250 gr and contains 23% of fat for its total weight. The Guerbigny is from the Munster’s family but looks like a Rollot.

That cheese comes from the village of Guerbigny, which is located in the Somme. It is sometimes called Cur de Marie for an unknown reason. Only one family continues the production, but can’t sell it, so they actually try to obtain an approval from the sanitary authorities.

Excellent with a Sancerre, that cheese will make the children laugh because of its sticky rind.
