The Séchon
That small round goat’s milk cheese is one of the prides of the Dauphiné (southeastern France). Only made with raw milk, it has a soft pate and is surface-ripened. It is 5 cm across and 2 cm high, weighs about 50 gr and contains about 23% of fat for its total weight.

The Séchon is from the Dauphiné, in the Rhône-Alpes region.
Production
Made all year long.
Minimum 2 weeks of maturation.
Choice and tasting
Eyes : white to Brown rind.
Palate : acidic, spicy if very affined.
Excellent with a grave wine.
