The Baguette Laonnaise is a massive raw cow’s milk cheese, which weighs about 500 gr, and contains 23% of fat for its total weight. It has a soft pate and a brown rind, washed with salted water.

A smaller Baguette Laonnaise also exists and is called Demi-Baguette (250 gr).

Both are almost disappeared now.
