The Pigouille

The Pigouille is a raw sheep’s milk cheese, which has the shape of a 9 cm across and 3,5 cm high disc. It weighs about 300 gr.

Its name comes from the pole used to navigate in the Poitevin’s marsh, called « pigouille » in local language. Originally, that cheese could be made with sheep’s or cow’s milk, and sometimes both. Now, there is not more than one producer, who uses only sheep’s milk.

The Pigouille has a fresh taste, a bit acidic and its pate is granular.
